Hi Davette, I love this recipe and made it for a third time today with Almonds! I use it up within a few days and I'm the only on drinking it, but you can always double the recipe. Adding a sweetener (dates, agave, honey, etc.) and also cinnamon make it extra delicious. I've also tried it with walnuts and loved it. Next I'm going to do cashews. We'll see how that goes! Also, it will separate in your fridge, just shake it up. Hope you and your son love it as much as I do! It such a cheaper option than buying it packaged, plus you can control what goes into it, and it's so easy!

I'm going to try this; I always have raw almonds [and other nuts] soaking for snacks, and my son likes the alternate 'milks', but the prices are getting outrageous. Will try with the other nuts as well. Thanks for the tip!

Natasha, Thanks again for the recipe! I'm excited to play around with it myself! Let me know what you think of the cookies and if you come up with any ideas to improve them. Have you found other uses for almond meal?

Wendy, I didn't know that info about soy. I'm experimenting to see if it still upsets my tummy. So far, it's unclear. I much prefer the almond milk to it though! Interesting about other foods that contribute to kidney stones. I loves those veggies, but good thing to be aware of. I have a bunch of Bob's Red Mill gluten-free products coming down with my mother-in-law which I'm excited about. Glad to hear you like their products!
